Dear Mr. Pacheco:
Your request to utilize a grease recovery device (G.R.D.) in lieu of the
requirement to install an inground grease trap at 18 Barnstable Road, Hyannis,
is granted with the following conditions:
(1) The applicant is restricted to the submitted menu dated May 12,
1999. The menu lists pizza, salads, grinders, and pockets. You
are reminded that deep frying is not allowed at this site.
(2) The floor plan shall be revised to show the proposed locations of
all the required sinks, restrooms, food storage areas, and food
preparation areas.
(3) The G.R.D. shall be installed in accordance with the State
Plumbing Code.
(4) The wastewater effluent (before and after the G.R.D. device) shall
be analyzed by a certified laboratory on a quarterly basis for one
year. The results shall be submitted to the Board of Health within
30 days of each test date.
(5) This letter shall be posted on the wall adjacent to your food service
permit when the establishment is open for business.
This variance is granted because grease recovery devices have been
demonstrated to be very effective at some other food establishments when
installed and utilized properly. Also, the owner of the property, Christopher
Kuhn, testified that he does not want to have an inground grease trap at this site

because it would have to be installed beneath the driveway where the tank
would be subject to collapse or other potential damage. We are aware of
another grease trap which did in fact collapse at an adjacent parcel owned by
Mr. Kuhn last year.
