This variance will allow you to operate a food service establishment at 300 Falmouth Road, Hyannis, with the following conditions: (1) No cooking, microwaving, or steaming of food will be allowed; only sandwiches can be prepared on site. (2) You will be required to install a minimum 1000 gallon grease interceptor if you cook, microwave, or steam any food on site. (3) Only disposable single service paper, plastic, and other disposable dishes and utensils are authorized. (4) All other regulations contained in 105 CMR 590.000, State Sanitary Code, Chapter X - Minimum Sanitation Standards for Food Establishments and of Town of Barnstable Board of Health Sanitation Regulations shall be strictly adhered to. (5) The building must be connected to Town sewer when the Department of Public Works determines its availability. This variance is granted because there will be no cooking, microwaving, or steaming of foods and no washing of pots, pans, and utensils at this site. You will only prepare sandwiches and salads. This variance is not transferable, and will be voided if the establishment has a change in use, change of ownership, or leased to a party other than the applicant.. After speaking with several helpful. employees at the Barnstable -Board of Health, they'-suggested I -apply for a' variance. Based on- the fact that- I plan to serve only cold- foods and my *septic system already meets the requirements of 310. CMR 15 .00 , Title 5 , of the State Environmental Code.'
