All seams must be tight fitting and the edges covered so they don't accumulate debris. Any wall, in food prep areas, not above the counters must be epoxy paint or FRP. You also were asking about using 2 ' of FRP and then epoxy paint above this surface. That would be OK too, it's your choice. Just handle the seams and edges as noted above. The drain board isn't marked on your floor plan. Is it to the right of the 3 bay or above the 3 bay? Let me know and I' ll write it in for. you. The tiles above the front food prep area are to be smooth and washable as noted on the finish schedule you were provided. The back kitchen has a sheetrock ceiling and will be painted with an epoxy paint. This wasn't noted on your plan and ,I will write it in for you if you would like. Dry storage will be in the basement as noted on the plan. Food and items used for food service will need to be enclosed in a cabinet type system or an area can be finished off with surfaces that are noted on the finish schedule that was provided to you. As of right now the dry storage consists of plastic shelving with a covering on the top shelf and plastic around the shelves. This is acceptable for now, but will have to be upgraded, as noted above, 6 months from the first graded routine inspection. The wording on the menu should be changed to "Before placing your order, please inform your server if a person in your party has a food allergy" this covers your business so that the customer tells you of the allergy before you make the food product, decreasing the chance of cross contamination. All hand sink are to be of a hands free type, a list of approved styles was provided to you. The hand sink in the front area must have splash guards on the sides that are adjacent to food prep areas. Lights are to be shielded or the bulbs may be "plast'ic" coated above prep areas and where food is stored. A prep sink will not be required at this time, but if violations concerning washing food product occurs, then one will be required to be installed.
