The Construction Projects Inspector from the Town of Barnstable DPW Inspected the site and questioned a local septic hauler and is satisfied that the `Broken Cone' condo unit is connected to the grease trap behind the `Kieran & Kyle' restaurant at 561 Main Street , Hyannis. Interior grease interceptor is installed in accordance with Plumbing Code. 2. The restaurant is limited to using paper plates and disposable utensils. 3. Any change in menu other than salads and smoothies are subject to review and approval by the DPW. 4. The existing 1000 gallon grease trap is inspected for structural integrity and a certification letter is sent to the DPW. Note, there are known defects with the existing grease trap (covers appear damaged). 5. The exterior grease trap is regularly pumped in accordance with DPW standards. Health Dept has indicated that they would only allow 66 for the food;permit for this restaurant because they have records that the GT is 1000 gallons and they did not go through 1 the process to increase 25%while that was an option a couple years ago. Maggie is not here today to confirm this unfortunately, but it was discovered as a possible problem last week. Best, Ellen S. The Health records show that it has been 66 seats for a long time based on the 1000 gallon grease trap. This year,the new owner of Hyannis Oyster Bar 2 41 , (or something similar to this name,the former Kian & Rylees) has tried to apply for 80 seats, however at this point he will be denied by Health unless he receives a variance as the grease trap does not meet the 15 gal/day per seat grease trap sizing for 80 seats. I know in the past, there was an offer to increase capacity of seating by 25% by the Board of Health, however,this policy was redacted and is no longer allowed (this specific facility never received the 25%extra credit) Thanks, Dave From: Swiniarski, Ellen Sent: Tuesday, May 07, 2019 4:48 PM To: Beaudoin, Griffin Cc: Stanton, David; O'Donnell, Stephen Subject: Proposed Menu 569 Main Street in old "Broken Cone" Unit Dear Griffin: I have attached correspondence from Dave Anderson from 2017 regarding the shared grease trap set up for a restaurant at 561 Main Street formerly"Kieran & Kyle" which is presently going through change of ownership and has 80 seats (they have had 80 seats for a long time), and the empty unit at 569 Main Street that was formerly"Broken Cone" (ice cream and pizza) with 29 seats. I am not sure if the sizing or how the tie in was figured out by DPW in 2017. We are trying to figure out the size of the grease trap here and if 569 Main is tied in,the possibility that room exists for the new tenant for a salad bar. I have attached their proposed menu for your determination if a grease trap is required (paper products only) and if it is found that the restaurant at 561 Main has maxed out the shared system,would the salad tenant be a good candidate for a GT variance for an undersink unit. Janis Gold was present. The Board had issued a temporary variance to The Broken _ Cone last spring which allowed them six months to put in a grease trap or prove to DPW that there was not enough grease to need one. The Broken Cone decided to reduce their menu to be limited to ice cream and just a few sandwiches with little or no mayonnaise to avoid the need for a grease trap. The facility has a Big Dipper (internal) grease trap. Roger Parsons, DPW, said they do not have the manpower to have and analyze chemical testing, etc. for the compliance for the use of the sewer. Roger prefers the property be connected to a grease trap so the Health Division does not have to continually monitor the owner following the accepted menu.
