Since our last meeting we have secured a larger manufacturing facility and estimate that the amount of grease entering the system at the O'Neil Store will be lessened by 75% to 80%. Again, we propose an under-the-sink grease trap with� a maintenance program that would satisfy members of the Board and the .Health Department. We will be making ice cream in the basement which is equipped with a sewage ejection system. Any grease would have to be trapped prior to entering that system. In addition, the layout of the building is not conducive to an outside trap. We propose an under-the-sink grease trap. Of course, a regular maintenance program with a log book would be implemented. (3 ) The grease interceptor must be cleaned weekly and a 'maintenance log available to the Board of Health must be kept. (4) You must have your- product tested immediately after you commence operation for bacteria, including co.liform counts, by an , accredited laboratory. Testing must the be done on a monthly basis. Prior to the issuance of a Food Service Permit, you must meet all of the provisions contained in 105 .CMR 590.000 - 599.000, of the State Regulations governing food 'and the Town of Barnstable �-/ho .0 Owd Ar Health Regulations. You are restricted to retail sales only from this establishment. + (6 ) Your operation will be re-evaluated in September, 1983, and appropriate adjustments concerning your production will be made. It should be- clearly understood that you- are operating on a trial basis. Your variance will not be renewed if any problems occur concerning the maintenance and operability of your grease_ interceptor or any other major violations are observed.
